Mexican for dinner tonight!!! I have been craving something spicy. Here is a healthy chicken recipe. Very simple. Includes whole ingredients.
- 1 C Black Beans
- 1 C Frozen or fresh corn
- 1/3 C Chopped onions
- 1 can Rotel
- 2 Chicken Breasts- taco seasoned
- 1 C cooked Brown Rice
Optional: Shredded cheese, tortilla chips, sour cream
Prepare rice as directed. In skillet sautée onions. Add corn, beans, chicken, and Rotel and cook until heated through. Mix in cooked rice. Enjoy! Can top with shredded cheddar cheese if desired. I live in Wisconsin for cheese is a must for me but it’s still great without it. Also amazing with tortilla chips! Look corn tortilla chips, much healthier then white flour tortilla chips.
